I made these soft and moist honey lemon cookies yesterday. They are delish!
Cream together 7 TBSP butter and 1/2 c sugar. Blend in 1 egg. In another bowl mix together 1/3 c honey, 2 TBSP grated lemon zest and 1/4 c plain yogurt (all I had was vanilla yogurt and it was fine) and 1/2 tsp lemon extract. In another separate bowl, mix together 1 3/4 c flour, 1/2 tsp salt and 1 tsp baking powder. Then blend together honey mixture and flour mixture into butter, sugar and eggs. Cream them all together until smooth.
Drop teaspoon sized drops onto greased cookie sheets (I prefer baking stone) and bake at 350 degrees for 10 to 12 minutes until the bottoms are golden brown. Remove from oven and place on cooling rack to cool.
While the 1st batch is baking mix together 1 c powdered sugar, 2 TBSP lemon zest and 2 TBSP lemon juice. Drizzle over warm cooking and let cool.
These are wonderful!
Just a side note – 40% of young adults do not know how to cook a standard meal. The reasoning, they were raised on prepared snacks and no one ever cooked with them while they were growing up. So, now grocery stores are offering cooking classes as a way to gain market share and capture food dollars. It is not hard to cook! Trial and Error! I am happy to report that in our house, the kitchen is the hub of our household. The center of family activities. Melanie loves to help prepare dinner – from setting the table, to emptying the dishwasher, to tearing lettuce for salad, to mixing and dumping. Even though she didn’t help me make these cookies, had her friend not been visiting I am certain that she would have been there right beside me.
I am happy to report that last night, Melanie asked for seconds of MEAT! Thank you LORD! I hope her taste buds are becoming less attracted to carbs! Or was it the fact that I fried the pork and drenched in honey-teriyaki sauce? Who knows – but nonetheless Jason and I were astounded that she wanted more meat and didn’t finish her rice!
Happy Cooking!
