Too Many Zucchini

So, I don’t know if your refrigerator vegetable bins are looking like mine these days, but mine are full of zucchini and crookneck squash.  Those plants in my garden are multiplying squash like rabbits.  So, I was online search the web for different recipes for squash.

I found one that I tried on the 4th that was absolutely delish and so very easy too!

Zippy Zucchini is what it is called and it tastes a lot like those cheddar biscuits from Red Lobster, but with veggies in them :-)

Take 4 zucchinis and slice them thinly.  Dice 1/2 cup onion and mix together with 1/2 cup of your favorite cheese (recipe said parmesan – I used mozzarella but next time I will use cheddar).  Then dump in 1 cup of bisquick, 1 tsp salt, 1/2 cup vegetable oil and 4 beaten eggs.  Stir together – being careful to not break up the zucchini.  Spread in a 9x13 buttered baking dish and bake in 350degree oven for 30 minutes.  Serve warm.

It was delish and I used up 4 of those zucchini so my veggie draw is a bit lighter!

We had a relaxing 4th – went to church, had Marc, Jennifer, Sabine, Lauren and Ra Ra over for dinner and fireworks.  This year, I had the lap of choice!  Last year RaRa had the privilege of holding Melanie and Sabine while the fireworks were set off!  This year was my turn! Loved IT!

try zucchini lasagne - parboil strips of zucchini and layer as the pasta - yum!
